Recipe: Gluten free dark chocolate muffins
1 cup self-raising gluten free flour
3/4 cup sorghum flour
1/2 tsp baking powder
1/2 cup Dutch process cocoa
2 eggs, lightly beaten
2/3 cup milk
1/3 cup vegetable oil
1 cup chopped dark chocolate (or choc chips)
Preheat oven to 190 celcius. Grease or line a muffin tray.
Mix everything together gently until just combined. Wooden spoons are the best!
Spoon into muffin tray, filling almost to top.
Bake for about 20 minutes or until a skewer inserted into centre comes out clean. Cool on a rack.
